Recipe
Ingredients:
- Prep Time: 10 minutes
- Cooking Time: 10 minutes
- Total Time: 20 minutes
- 12 large sea scallops, patted dry
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon finely chopped fresh rosemary
- 1 teaspoon finely chopped fresh parsley
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
Directions:
Heat olive oil in a large skillet over medium-high heat.
Season the scallops with salt and pepper. Once the skillet is hot, add scallops, ensuring they are not touching each other.
Sear scallops for about 1.5 minutes on each side until golden and a crust forms.
Remove scallops from skillet and set aside.
In the same skillet, reduce heat to medium. Add butter and garlic, sauté for about 1 minute until garlic is fragrant but not browned.
Stir in thyme, rosemary, and parsley. Cook for another minute until herbs are fragrant.
Add lemon juice, stir, and season with salt and pepper.
Return scallops to the skillet, spoon herbed butter sauce over them, and heat through for about 1 minute.
Serve immediately.
